Cherry Wood Chips
Cherry wood gives a slightly sweet, fruity smoke flavour that is great for poultry, game birds and pork.
For the perfect flavour, soak the chips in water for at least 30 minutes before using and simply add to hot coals. Wood will create more smoke and therefore, more flavour.
Always grill with the lid closed to allow the smoke to fully penetrate the food.

For charcoal grills: when coals are covered with white ash and ready to cook, sprinkle a handful of wet wood chips on top of the hot coals.
For gas grills: before preheating the grill, place wet wood chips in small alluminium pan in the front left-hand corner of the grill, underneath the cooking grate. Creating smoke in the grill before placing food on the cooking grate will give the best results. Do not place food above wood.
