What’s Included in The Course? 

We have had consistently excellent feedback from our guests for the last two years. The one thing that some guests have asked for is to spend more time on the courses, as they can be a lot to take in at such a fast pace. Now, new for 2020, we have decided to increase the length of our regular and intermediate courses from three to four hours, and our smoking courses from six to seven hours. 

Our Smoking, Low and Slow Course will be a full seven hours of heavenly smoke infused deliciousness. You will be hosted by our own barbecue Chefs Andrew Dickens and Joe-Nesbitt-Larking. Each Smoking, Low and Slow Course is limited to 25 guests and we will make sure that you are “Hands-On”, setting up and using a selection of gas, electric and charcoal barbecues as well as bullet smokers and pellet smokers using different flavours of wood smoke. You will be prepping a selection of different meats, fish, vegetables and other ingredients then cooking them “low and slow” whilst managing the fuel, barbecue temperatures, vents and the food. You will also be selecting and using different rubs, spritzes, marinades and mopping sauces.

You will be greeted on the day with some smoky bacon rolls and then we’re straight into the action. There will be an overnight smoked brisket and pork butt and you will prepping for some “hot and fast” smoked meats and a selection of other delicious food such as smoked pork collars, pork belly, tri-tip, picanha, oxtail, pit beans, smokey mac ‘n’ cheese, chicken, trout, salmon, dirty onions, slaw, salads and desserts. Coffee and soft drinks are available all day. Two beers or wines are included, and more can be bought if you’re lucky enough to not be driving! Bring a notepad and pen for your own notes but we send you recipes and notes by email directly after the course. Don’t have a big breakfast before you arrive - leave room for the food you will prepping and eating during the smoking course. We look forward to seeing you!

 

Barbecue Course Gift Vouvhers

If they come on their own, there are always other guests who have been given the course as a gift so they will always have company. They won’t be on their own!

Arrival

Please arrive 30 minutes before the course is due to start and go to our barbecue shop to check in. There is plenty of free on-site car parking.

Please note: no physical tickets will be sent out. Please bring a mobile phone with the confirmation email on it or a print-out so we can book you in on arrival. For any unforeseen reasons beyond our control we reserve the right to cancel the event at any time. 

What to wear on the course

Our Barbecue School is fully covered and heated - rain will never stop play at Riverside! You should, however, dress for the weather on the day. Check the local weather forecast on the day of your course. Please wear long sleeves, long trousers and sturdy footwear. If the forecast is for cold weather wear several layers and a coat. If it’s going to be hot you should still wear sturdy footwear and lightweight long trousers and tops. We have run courses in January with snow outside where everyone was perfectly warm and happy in the Barbecue School, but of course they all wore the appropriate clothing for the weather conditions!

Allergies / Food Intolerances

Wherever possible we will try to accommodate our guests' food requirements. However, if you have any allergies that can cause you serious harm, we advise you not to attend one of our courses. This is because even if we remove those allergens from our menu (which we are happy to do) we simply cannot guarantee that some of the other ingredients on the course have not come into contact with that allergen from harvesting, through production, packaging or transportation to us.

For any intolerances or allergens that do not cause you serious harm please call us a minimum of 14 days before your course so we can discuss the options. We must make it clear though that despite our best efforts we cannot guarantee that every ingredient on the course will free from those allergens for the reasons above.

Vegetarian and Vegan Definitions

Vegetarians and vegans are more than welcome on our courses. We use the definitions below.

The Vegetarian Society Definition of Vegetarianism

Vegetarians don’t eat fish, meat or chicken. A vegetarian diet does not include meat or poultry, fish or seafood, insects, gelatine or animal rennet, stock or fat from animals. Vegetarians don’t eat products or by-products of slaughter. A vegetarian diet can include vegetables and fruits, grains and pulses, nuts and seeds, eggs, dairy products and honey.

The Vegan Society Definition of Veganism

A plant-based diet avoiding all animal foods such as meat (including fish, shellfish and insects), dairy, eggs and honey, as well as avoiding animal-derived materials, products tested on animals and places that use animals for entertainment.

Booking Tickets

Our courses sell out very quickly, so be sure to get your tickets as far in advance as you can. Remember, the weather is not an issue for us here at Riverside so, barring any extreme weather, the course will always go ahead! If you buy a gift voucher for someone, do advise them to book a date as quickly as possible – even if it is for later in the year!

Ticket Refunds and Different Course Dates

As our courses usually sell out, we buy ingredients for a full course and put into place full staffing resources for every course. For these reasons we are not able to offer refunds or swap tickets to different course dates within 30 days of the event. You are however, more than welcome to transfer your ticket to a friend or family member. All you need to do is call us or send an email with your order number and the name of the person who will be taking your place.

Riverside BBQ School: Mission Statement

The late and much missed barbecue Enthusiast Russell Jeffery built the Riverside Barbecue School with some of the fantastic staff from the Riverside Garden Centre. Russell’s mission was to create an “Absolutely Fantastic” barbecue School where our guests could learn how to make the most of their barbecues and practice some of the tips and techniques the professionals use every day. It was very important to Russell that the Barbecue School was completely covered and heated so, no matter what the weather, the courses would always run.

With his legendary enthusiasm, commitment and hard work, Russell and his team from Riverside completed the mission. We now have one of the very best barbecue schools in the UK, with hundreds and hundreds of guests, public and corporate, having had an “Absolutely Fantastic” experience with us.

As some of you will know, in March 2019 Russell was taken from us by cancer, with obviously devastating consequences. Alongside Joanne Jeffery, Russell’s equally hard-working wife and owner of Riverside, our mission now is to continue to make The Riverside Barbecue School the best it can be and welcome thousands more guests into the barbecue family. To that end, a group of 10 of us, including Joanne, will be raising money for Cancer Research UK by hiking across Iceland in August 2020.
